Unable to boot to newly installed Linux OS

My new board arrived a few days ago. I was able to boot to USB stick with Linux Mint. I successfully installed Linux Mint. When I remove the stick and attempt to boot to the newly installed OS, the device goes straight to boot menu and then BIOS. It boots to the stick correctly every time. I installed the OS multiple times - the second time choosing UEFI.
I checked the boot menu settings and they look fine. This is my fifth Up board and first time that I have had issues. However, this is also the first Up2 board.
Any known solutions - other then returning it for a replacement?

It doesn't seems to be an hardware issue.
Please try to install the recommended distribution (Ubuntu 16.04 or Ubuntu 18.04) using the standard settings both for installation and partitioning and make sure to select (and force if necessary) UEFI installation.
