Installing / booting OS using Console cable (no video)

I am trying to run the Upsquared board in a headless manner - IE no video.
I have disabled the graphics adapter in the bios, but when I try to install or boot into Ubuntu 16.04 server I get the message "no suitable video mode found, booting in blind mode.."
Any thoughts? I've tried ubuntu 16.04 LTS, 18.04 LTS, and ubuntu 16.04 server

Which BIOS version are you using?
Maybe It wouldn't support that "no video" mode.https://downloads.up-community.org/download/up-squared-uefi-bios-v3-3/
