Best distribution for dockerized OpenHab and NextCloud

Hello,

I would like to use my Up board (4GB RAM) to run docker containers.
The 2 first ones would be OpenHab and NextCloud.
I will need to access GPIO and USB periferals.
Should I use Ubuntu or Yocto ?

Last but not least. Can I boot the distro off the network so that I would store everything on my NAS ?
